Instructions

  1. Preheat oven to 350°F (175°C). Line a baking pan with parchment paper.
  2. In a bowl, mix flour, powdered sugar, and salt. Cut in cold butter until mixture resembles coarse crumbs. Press into the prepared pan and bake for 15 minutes.
  3. In a saucepan, combine cranberries, sugar, eggs, lemon juice, lemon zest, and cornstarch. Cook over medium heat, stirring constantly until thickened.
  4. Pour the cranberry lemon filling over the baked crust. Bake for an additional 20 minutes or until filling is set.
