- 1 cup all-purpose flour
- 1/2 cup powdered sugar
- 1/2 teaspoon salt
- 1/2 cup unsalted butter, cold
- 1 cup fresh cranberries
- 1 cup granulated sugar
- 2 large eggs
- 1/4 cup fresh lemon juice
- 2 teaspoons lemon zest
- 2 tablespoons cornstarch
Instructions
- Preheat oven to 350°F (175°C). Line a baking pan with parchment paper.
- In a bowl, mix flour, powdered sugar, and salt. Cut in cold butter until mixture resembles coarse crumbs. Press into the prepared pan and bake for 15 minutes.
- In a saucepan, combine cranberries, sugar, eggs, lemon juice, lemon zest, and cornstarch. Cook over medium heat, stirring constantly until thickened.
- Pour the cranberry lemon filling over the baked crust. Bake for an additional 20 minutes or until filling is set.
- Allow to cool, then cut into squares. Optional: dust with powdered sugar before serving.
Notes
- Chill bars before slicing for cleaner cuts.
- Use fresh cranberries for best flavor.
- Replace lemon with lime for a different citrus twist.
