- 2 chicken breasts, sliced
- 1/4 cup honey
- 2 tablespoons chipotle peppers in adobo sauce, chopped
- 1 cup cooked white rice
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 2 tablespoons olive oil
- Fresh cilantro, for garnish
- Salt and pepper, to taste
Instructions
- Marinate chicken with honey, chopped chipotle peppers, salt, and pepper for at least 30 minutes.
- Heat olive oil in a skillet over medium heat. Cook chicken slices until fully cooked and slightly caramelized, about 8-10 minutes.
- In the same skillet, sauté sliced peppers until tender, about 5 minutes.
- Serve grilled chicken over cooked rice, topped with sautéed peppers and fresh cilantro.
Notes
- Adjust the spice level by adding more or less chipotle peppers.
- Use jasmine or brown rice for variation.
- Garnish with lime slices for extra tang.
