- 1 lb ground beef
- 1 diced onion
- 2 cloves garlic, minced
- 1 can diced tomatoes (14.5 oz)
- 1 can black beans (15 oz), drained
- 1 cup corn kernels
- 1 packet taco seasoning
- 4 cups beef broth
- Shredded cheddar cheese
- Fresh cilantro, chopped
- Sour cream for topping
Instructions
- In a large pot, cook ground beef until browned. Add diced onion and minced garlic, cook until softened.
- Stir in diced tomatoes, black beans, corn, taco seasoning, and beef broth.
- Bring to a boil, then reduce heat and simmer for 20 minutes to blend flavors.
- Serve hot, topped with shredded cheese, cilantro, and sour cream as desired.
Notes
- Adjust spice level with more or less taco seasoning.
- This soup can be made vegetarian by omitting the beef and adding more beans and vegetables.
