  • 4 boneless, skinless chicken breasts
  • 4 cups potatoes, cut into wedges
  • 3 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1/2 cup grated parmesan cheese
  • 1 teaspoon dried thyme
  • Salt and freshly ground black pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Preheat oven to 400°F (200°C).
  2. In a large bowl, toss potatoes with 1 tbsp olive oil, thyme, salt, and pepper. Spread on a baking sheet.
  3. Bake potatoes for 25 minutes until golden and crispy.
  4. Meanwhile, season chicken breasts with salt, pepper, and minced garlic.
  5. Heat 2 tbsp olive oil in a large oven-safe skillet over medium heat.
  6. Sear chicken breasts for 3-4 minutes per side until golden.
  7. Sprinkle parmesan cheese over chicken and add baked potatoes around the chicken in the skillet.
  8. Transfer skillet to the oven and bake for 15-20 minutes until chicken reaches 165°F (75°C).
  9. Garnish with fresh parsley and serve hot.
