- 4 boneless, skinless chicken breasts
- 4 cups potatoes, cut into wedges
- 3 tablespoons olive oil
- 4 cloves garlic, minced
- 1/2 cup grated parmesan cheese
- 1 teaspoon dried thyme
- Salt and freshly ground black pepper to taste
- Fresh parsley for garnish
Instructions
- Preheat oven to 400°F (200°C).
- In a large bowl, toss potatoes with 1 tbsp olive oil, thyme, salt, and pepper. Spread on a baking sheet.
- Bake potatoes for 25 minutes until golden and crispy.
- Meanwhile, season chicken breasts with salt, pepper, and minced garlic.
- Heat 2 tbsp olive oil in a large oven-safe skillet over medium heat.
- Sear chicken breasts for 3-4 minutes per side until golden.
- Sprinkle parmesan cheese over chicken and add baked potatoes around the chicken in the skillet.
- Transfer skillet to the oven and bake for 15-20 minutes until chicken reaches 165°F (75°C).
- Garnish with fresh parsley and serve hot.

- You can use roasted vegetables instead of potatoes for variety.
