- 1 pound ground beef or turkey
- 1 package (9 ounces) refrigerated tortellini
- 1 can (14.5 ounces) diced tomatoes
- 4 cups beef or chicken broth
- 1/2 cup grated Parmesan cheese
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- Salt and pepper to taste
- Chopped fresh parsley for garnish
Instructions
- Preheat a large pot over medium heat and add olive oil.
- Mix ground meat with garlic powder, salt, and pepper. Form into small meatballs and cook until browned, about 5-7 minutes.
- Add diced tomatoes and broth to the pot. Bring to a boil.
- Reduce heat, add tortellini, and simmer for 10 minutes until pasta is tender.
- Stir in Parmesan cheese and garnish with chopped parsley before serving.
Notes
- You can substitute ground chicken or turkey for beef.
- For extra flavor, add a splash of red wine or Worcestershire sauce to the meatballs.
- This soup is best enjoyed fresh but can be stored in the fridge for up to 2 days.
