- 2 lbs beef chuck roast, cubed
- 3 carrots, chopped
- 3 potatoes, cubed
- 1 onion, diced
- 3 cloves garlic, minced
- 4 cups beef broth
- 2 tbsp tomato paste
- 2 tbsp olive oil
- 1 tsp dried thyme
- 1 tsp salt
- 1/2 tsp black pepper
Instructions
- Heat olive oil in a large pot over medium-high heat, and brown the beef cubes until golden.
- Add diced onion and garlic, cook until fragrant.
- Stir in tomato paste, thyme, salt, and pepper.
- Pour in beef broth, bring to a boil.
- Add carrots and potatoes, reduce heat, and simmer for 1.5 to 2 hours until beef is tender.
- Adjust seasoning if needed and serve hot.
Notes
- You can add peas or green beans in the last 10 minutes for extra color and flavor.
- This dish tastes amazing when served with crusty bread.
