Ingredients

  • 1 pound ground beef
  • 1 can cream of mushroom or onion soup
  • 2 cups frozen mixed vegetables
  • 3 cups diced potatoes
  • 1 cup shredded cheese
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a skillet, heat olive oil over medium heat, cook ground beef until browned, season with salt and pepper.
  3. In a baking dish, layer diced potatoes, cooked ground beef, mixed vegetables, and soup.
  4. Sprinkle shredded cheese on top.
  5. Cover with foil and bake for 45 minutes, remove foil and bake 10 more minutes until cheese is bubbly.
  6. Garnish with chopped parsley before serving.
