- 1 pound ground beef
- 1 can cream of mushroom or onion soup
- 2 cups frozen mixed vegetables
- 3 cups diced potatoes
- 1 cup shredded cheese
- 1 tablespoon olive oil
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Preheat oven to 375°F (190°C).
- In a skillet, heat olive oil over medium heat, cook ground beef until browned, season with salt and pepper.
- In a baking dish, layer diced potatoes, cooked ground beef, mixed vegetables, and soup.
- Sprinkle shredded cheese on top.
- Cover with foil and bake for 45 minutes, remove foil and bake 10 more minutes until cheese is bubbly.
- Garnish with chopped parsley before serving.
Notes
- You can substitute fresh vegetables for frozen for a fresher taste.
- Leftovers can be stored in an airtight container for up to 3 days.
