- 4 large potatoes, peeled and diced
- 1 onion, chopped
- 3 cloves garlic, minced
- 4 cups chicken or vegetable broth
- 1 cup heavy cream
- 1 cup shredded cheddar cheese
- 2 tablespoons butter
- Salt and pepper to taste
- Chopped chives for garnish
Instructions
- Place potatoes, onion, garlic, broth, butter, salt, and pepper into the crock pot.
- Cook on low for 6-8 hours until potatoes are tender.
- Use an immersion blender or transfer to a blender to puree until smooth.
- Stir in heavy cream and cheese until melted and creamy.
- Garnish with chives before serving.

- Adjust thickness with additional broth or cream as desired.
- For a chunkier style, blend less or mash potatoes with a potato masher.
