  • 1 ½ cups graham cracker crumbs
  • ½ cup melted butter
  • 24 oz cream cheese, softened
  • 1 cup granulated sugar
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon
  • ¼ cup all-purpose flour
  • ½ cup sour cream
  • For the churros: ½ cup water, 2 tablespoons butter, ¼ cup sugar, ½ cup all-purpose flour, 2 large eggs, cinnamon sugar for coating, caramel sauce for drizzling

Instructions

  1. Preheat oven to 350°F (175°C). Mix graham cracker crumbs and melted butter, press into a springform pan.
  2. In a large bowl, beat cream cheese and sugar until smooth. Add eggs one at a time, then vanilla and cinnamon. Mix in flour and sour cream.
  3. Pour filling over crust. Bake for 55-60 minutes until set. Cool completely.
  4. Make churros: combine water, butter, and sugar in a saucepan, bring to boil. Add flour and mix until dough forms. Remove from heat, cool slightly, then beat in eggs until smooth.
  5. Pipe churro dough into hot oil, fry until golden, coat with cinnamon sugar.
  6. Top cheesecake with fried churros, drizzle with caramel sauce. Serve and enjoy!
