- 1 ½ cups graham cracker crumbs
- ½ cup melted butter
- 24 oz cream cheese, softened
- 1 cup granulated sugar
- 3 large eggs
- 1 teaspoon vanilla extract
- 1 teaspoon ground cinnamon
- ¼ cup all-purpose flour
- ½ cup sour cream
- For the churros: ½ cup water, 2 tablespoons butter, ¼ cup sugar, ½ cup all-purpose flour, 2 large eggs, cinnamon sugar for coating, caramel sauce for drizzling
Instructions
- Preheat oven to 350°F (175°C). Mix graham cracker crumbs and melted butter, press into a springform pan.
- In a large bowl, beat cream cheese and sugar until smooth. Add eggs one at a time, then vanilla and cinnamon. Mix in flour and sour cream.
- Pour filling over crust. Bake for 55-60 minutes until set. Cool completely.
- Make churros: combine water, butter, and sugar in a saucepan, bring to boil. Add flour and mix until dough forms. Remove from heat, cool slightly, then beat in eggs until smooth.
- Pipe churro dough into hot oil, fry until golden, coat with cinnamon sugar.
- Top cheesecake with fried churros, drizzle with caramel sauce. Serve and enjoy!
Notes
- Chill cheesecake at least 4 hours before serving for best texture.
- You can prepare churros in advance and reheat briefly before topping.
- Replace caramel with chocolate sauce for variation.
