  • 1 large egg
  • 1 teaspoon vanilla extract
  • For the crumble topping:
    1/2 cup all-purpose flour
    1/4 cup brown sugar
    1/4 teaspoon cinnamon
    4 tablespoons unsalted butter, cold and cubed

Instructions

  1. Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
  2. Mix flour, baking powder, and salt in a bowl. Cut in cold butter until crumbly. Add sugar, egg, and vanilla, mixing until combined. Chill dough for 30 minutes.
  3. Prepare the crumble topping by combining flour, brown sugar, cinnamon, and butter until crumbly.
  4. Drop spoonfuls of dough onto prepared baking sheets. Sprinkle crumble topping generously over each cookie.
  5. Bake for 12-15 minutes, until edges are golden. Cool on wire racks.
