- 2 cans (15 oz each) white beans, drained and rinsed
- 4 slices bacon, cooked until crispy and chopped
- 1 onion, diced
- 3 cloves garlic, minced
- 4 cups chicken or vegetable broth
- 1 teaspoon thyme
- Salt and pepper to taste
- Olive oil as needed
- Fresh parsley for garnish
Instructions
- Heat olive oil in a large pot over medium heat. Add diced onion and cook until translucent, about 5 minutes.
- Add minced garlic and cook for another minute.
- Stir in drained beans and broth, bring to a boil.
- Reduce heat and simmer for 15-20 minutes.
- Use an immersion blender to blend until smooth, or transfer to a blender in batches.
- Season with thyme, salt, and pepper. Serve hot, topped with crispy bacon and fresh parsley.

- For extra creaminess, add a splash of heavy cream or Greek yogurt.
- Adjust seasoning according to taste.
