- 4 large sweet potatoes, peeled and cubed
- 1/2 cup unsalted butter
- 1/2 cup brown sugar
- 1/4 cup milk
- 1 teaspoon vanilla extract
- 1/2 teaspoon cinnamon
- 1/4 teaspoon nutmeg
- Salt to taste
- 1 cup mini marshmallows
Instructions
- Preheat oven to 375F (190C).
- Boil sweet potatoes until tender, about 15 minutes. Drain and mash.
- In a large bowl, combine mashed sweet potatoes, butter, brown sugar, milk, vanilla, cinnamon, nutmeg, and salt. Mix until smooth.
- Spread the mixture evenly in a greased baking dish.
- Sprinkle marshmallows on top of the casserole.
- Bake for 20-25 minutes until marshmallows are melted and golden brown.
Notes
- For extra flavor, add a splash of bourbon or orange zest to the mashed sweet potatoes.
