- 1 pound Italian sausage, casings removed

Instructions
- In a large pot, cook sausage over medium-high heat until browned. Remove excess fat if necessary.
- Add chopped onion and garlic; cook until softened.
- Pour in chicken broth, bring to a simmer.
- Add tortellini and Italian seasoning; cook until tortellini is tender.
- Stir in heavy cream and spinach; cook for 2-3 minutes until heated through.
- Season with salt and pepper.
- Serve warm, garnished with parsley and Parmesan cheese.
