- 2 cups fresh spinach, chopped
- 1 cup sliced mushrooms
- 3 cloves garlic, minced
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese
- 2 tablespoons olive oil
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Cook the pasta according to package instructions until al dente. Drain and set aside.
- In a large skillet, heat olive oil over medium heat. Add sliced mushrooms and cook until tender and golden.
- Add minced garlic and cook for 1 minute until fragrant.
- Pour in heavy cream and bring to a simmer. Stir in grated Parmesan cheese until melted and the sauce thickens.
- Add chopped spinach and cook until wilted.
- Combine cooked pasta with the sauce, tossing to coat evenly. Season with salt and pepper.
- Garnish with fresh parsley and extra Parmesan if desired. Serve hot.
