Ingredients

  • 4 large onions, thinly sliced
  • 2 tablespoons olive oil
  • 2 tablespoons butter
  • 4 cups beef broth
  • 1 teaspoon sugar
  • 1 teaspoon thyme
  • Salt and pepper to taste
  • 1 baguette, sliced
  • 1 1/2 cups grated Gruyere cheese

Instructions

  1. Heat olive oil and butter in a large pot over medium heat.
  2. Add sliced onions, sugar, salt, and cook slowly until deeply caramelized, about 30-40 minutes.
  3. Pour in beef broth, add thyme, and simmer for 15 minutes.
  4. Preheat oven broiler. Arrange baguette slices on a baking sheet and toast until golden.
  5. Ladle soup into ovenproof bowls, top with toasted baguette slices, and sprinkle with cheese.
  6. Place bowls under the broiler until cheese is bubbling and golden. Serve hot.
