- 4 large onions, thinly sliced
- 2 tablespoons olive oil
- 2 tablespoons butter
- 4 cups beef broth
- 1 teaspoon sugar
- 1 teaspoon thyme
- Salt and pepper to taste
- 1 baguette, sliced
- 1 1/2 cups grated Gruyere cheese
Instructions
- Heat olive oil and butter in a large pot over medium heat.
- Add sliced onions, sugar, salt, and cook slowly until deeply caramelized, about 30-40 minutes.
- Pour in beef broth, add thyme, and simmer for 15 minutes.
- Preheat oven broiler. Arrange baguette slices on a baking sheet and toast until golden.
- Ladle soup into ovenproof bowls, top with toasted baguette slices, and sprinkle with cheese.
- Place bowls under the broiler until cheese is bubbling and golden. Serve hot.
Notes
- Slow caramelizing onions develops sweetness; don’t rush this step.
- You can substitute vegetable broth for a vegetarian version.
