  • 3 celery stalks, sliced

  • 1 cup green beans
  • 6 cups beef broth
  • 2 cloves garlic, minced
  • 1 teaspoon dried thyme
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large pot over medium-high heat. Brown beef chunks on all sides, then remove and set aside.
  2. In the same pot, sauté onions, garlic, carrots, and celery until softened.
  3. Return beef to the pot, add potatoes, green beans, beef broth, thyme, salt, and pepper.
  4. Bring to a boil, then reduce heat to low and simmer uncovered for 2 hours, stirring occasionally.
  5. Garnish with fresh parsley before serving.
