- 1.5 lbs beef stew meat, cut into chunks
- 2 tablespoons olive oil
- 1 large onion, diced
- 3 carrots, sliced
- 3 celery stalks, sliced
- 2 potatoes, diced
- 1 cup green beans
- 6 cups beef broth
- 2 cloves garlic, minced
- 1 teaspoon dried thyme
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Heat olive oil in a large pot over medium-high heat. Brown beef chunks on all sides, then remove and set aside.
- In the same pot, sauté onions, garlic, carrots, and celery until softened.
- Return beef to the pot, add potatoes, green beans, beef broth, thyme, salt, and pepper.
- Bring to a boil, then reduce heat to low and simmer uncovered for 2 hours, stirring occasionally.
- Garnish with fresh parsley before serving.
Notes
- For extra flavor, add a splash of red wine during browning.
- This soup tastes even better reheated the next day.
