Instructions
- Preheat oven to 350°F (175°C). Grease and flour two 8-inch round cake pans.
- In a bowl, whisk together flour, cocoa powder, baking powder, baking soda, and salt.
- In another large bowl, beat sugar, eggs, oil, and vanilla until well combined.
- Gradually add dry ingredients alternating with buttermilk, mixing until smooth.
- Fold in blackberries gently.
- Divide batter evenly between pans and bake for 30-35 minutes or until a toothpick inserts comes out clean.
- Allow cakes to cool completely before frosting.
- For ganache, heat heavy cream until just boiling, pour over dark chocolate chips, and stir until smooth.
- Frost cooled cakes with ganache and decorate with additional blackberries and dark chocolate shavings.
