Instructions
- Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
- In a large bowl, cream together the softened butter and sugar until light and fluffy.
- Add eggs one at a time, mixing well after each addition.
- In a separate bowl, whisk together flour, cream of tartar, baking soda, salt, and cinnamon.
- Gradually add dry ingredients to wet ingredients, mixing until combined.
- In a small bowl, mix 1/4 cup sugar with 1 tablespoon cinnamon for rolling.
- Shape dough into 1 1/2-inch balls, roll in cinnamon sugar mixture, and place on prepared baking sheets.
- Bake for 10-12 minutes until edges are lightly golden.
- Remove from oven and let cool on wire racks.
Notes
- Chill dough for 30 minutes for thicker cookies.
- Store in an airtight container for up to a week.
