- 8 oz (225 g) pasta (penne or fusilli)
- 1 cup cherry tomatoes
- 1 cup fresh spinach
- 1 block (7 oz) feta cheese
- 2 tablespoons olive oil
- 3 cloves garlic, minced
- Salt and pepper to taste
- Fresh basil or parsley for garnish
Instructions
- Preheat oven to 400°F (200°C).
- In a baking dish, combine cherry tomatoes, garlic, olive oil, salt, and pepper. Place feta block in the center.
- Bake for 20 minutes until feta is golden and tomatoes are blistered.
- Cook pasta according to package instructions. Drain and set aside.
- Remove feta from oven and gently mash. Mix with roasted vegetables and cooked pasta.
- Stir in fresh spinach until wilted. Garnish with basil or parsley before serving.
Notes
- For extra flavor, add red pepper flakes or a squeeze of lemon.
- Use gluten-free pasta for dietary needs.
